Mas des Colibris – Amistat 2025
France, Gignac, Saint-Guilhem-le-Désert
Vin Méthode Nature
Crafted by Sébastien Galtier, Amistat is Mas des Colibris in its lightest, most energetic form — spontaneously fermented with native yeasts and bottled without additions.
The blend is a crash course in Occitan. Grenache brings bright red berries, white pepper, and roundness, while Carignan adds plum, earthiness, and a touch of wild Mediterranean herbs — thyme, rosemary, and lavender, the scents that cover these hillsides.
Both varieties are perfectly suited to this climate: late-ripening, deep-rooted, and adapted to arid extremes. The 2025 season put that resilience to the test. August heatwaves cut yields across the region, creating exactly the kind of stress a conventional cellar can correct after the fact — acidifying, adjusting, compensating.
Here, there was no such safety net. With nothing added, the grapes had to arrive at harvest already in balance. They did: concentrated and ripe, yet still full of vitality. That made the moment of harvest critical — entirely down to the winemaker’s judgement, finding the precise point where ripeness, freshness, and energy came together.
Place did the rest. Saint-Guilhem-le-Désert sits at the foot of the Larzac plateau and the Cévennes, where elevation and maritime breezes temper the summer heat. The grapes ripened slowly and evenly, preserving the snappy acidity and aromatic lift that make this wine so alive.
Natural wine with enough swagger to convert the unbelievers — without giving a lecture.
