Babba III
This wine follows a similar vinification process as Babba II, with a crucial difference: the initial fermentation is kickstarted by botrytized Furmint 2020 rather than Tamjanika. In subsequent years, Mezes Feher 2021 and Sremska Zelenika 2021 musts are introduced to reignite fermentation, culminating in a third fermentation with Grašac 2022 from the renowned Fodor plot.
The absence of Tamjanika in this iteration reduces the pronounced muscat aromatics found in Babba II. However, the noble rot-afflicted Furmint imbues the wine with extraordinary complexity, reminiscent of a top-tier dry Szamorodni. Expect a rave of honeyed notes, candied orange peel, warm spices, and vibrant acidity, all underpinned by a saline – solera like, nutty character.
