When making traditional, natural Amarone everything is about giving it time.
Selecting the best grape in the vineyard, letting it dry for 4 months and shrivel into raisins to concentrate flavors in the grapes.
Letting fermentation slowly start and not trying to control it in any way.
Aging for 5 years in oak barrels and 2 in the bottle before release.
Very intense dark ruby-red color. The nose is rich and seductive and the aromas evolve continuously after the bottle has been uncorked.
At first there are notes of ripe red fruit and spices, which then turn towards a herbal and floral sensation, cherry liqueur, fig, carob, lavender and acacia blossom.
In the mouth it is persistent, silky with bold flavours of dark chocolate, vanilla, black cherry, ripe plums wrapping it up with leather and hay.
