Pinot-Noir-dominant Champagne with on the nose flavours of red fruits, white flowers, linden and lavender, enriched by elegant notes of yeast and bread crust. The taste gives pleasant minerality, red fruits, a hint of soft spices and a lick of grapefruit on the finish. Overall rich completeness. 10 months ageing in the barrel; 30 months ageing in the bottle.
Perfect as an aperitif, but also a good companion for fish dishes and for lighter first courses; for risotto with lobster and amazing with smoked sausages.
Lahaye Champagne comes from Grand Cru rated vines in Bouzy and Ambonnay, vines with an average age of 35 to 40 yrs, mainly Pinot Noir. In 2007 there was conversion to biodynamic viticulture, in order to improve the characteristics of the terroir and to fully express the potential of soil and vines. Vinification in 228L oak barrels and since 2014 use of amphora jars, to obtain extra fruitiness.
