Amfora Šipon 2022 is a vibrant and refreshing wine with a rustic charm. Aromas of ripe pear, red apple, ginger and subtle citrus zest burst forth, leading to a lively palate of bright acidity and fine-grained tannins.
The wine’s unique character is a result of three weeks maceration and aging in buried amphora. This ancient method allows for a slow oxygen exchange, enhancing the fruit flavors and introducing earthy and mineral nuances without imparting additional flavors, as happens with wood barrel aging, where oxidation is more pronounced leading to spicy notes with more nutty, dry fruit and caramel aromas.
Both methods offer unique benefits and can significantly shape the final character of the wine. It’s fascinating to see how different aging vessels can shape the aromas and flavors of the wine!
